pickling


finally got around to pickling some carrots and hot peppers from Gathering Together Farm. I'm excited to taste them! The recipe I used was made up by my chef brother-in-law. I tried some he made about a year ago which were a perfect balance of hot + sweet.

1 part apple cider vinegar
1.5 part sugar (i used turbinado sugar)
3 parts water
anise seed
coriander seed
black peppercorns
add all of them above to a stockpot, bring to boil and let simmer a few minutes. then strain and add to quart-size mason jars filled with sliced carrots, hot peppers, shallots, etc. yum!
